Low Carb Pecan Pie Recipe

It's National Pecan Pie Day! To celebrate, we created a low carb, keto friendly version of this decadent dessert.  Enjoy!

INGREDIENTS

The Crust

  • 3/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/2 tsp of salt
  • 1/2 tbsp of coconut oil
  • 2 whole eggs
  • 6 tbsp butter
  • 1/2 tsp vanilla extract

The Filling

  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup erythritol
  • 2 tbsp butter
  • 1/2 cup sugar free maple syrup
  • 1/2 cup pecan pie almond nut butter
  • 1 cup of chopped pecans

METHOD

  • Start with the crust and mix the coconut flour, erythritol and salt together in a bowl.
  • In a separate bowl, mix the coconut oil, eggs, butter and vanilla extract.
  • Slowly add in the dry ingredients to the wet ingredients bowl, and mix until they form a dough.
  • Grease a pie pan and evenly press the dough around the edges of the pan and into the bottom.
  • bake the pie crust for 10 minutes at 350 degrees and then let the crust cool.
  • Next, cover your crust with the chopped pecans.
  • In another bowl, mix all of the filling ingredients together with a whisk.
  • Pour the filling mixture over the pecans and pie crust. 
  • Bake for 45-50 minutes at 350 degrees and then let the crust cool.
